Ingredients

For the chicken skewers

For the feta fries

  • 2 tablespoons olive oil For extra crispness.

Instructions

Make the Chicken Skewers

  • In a large bowl, combine the extra virgin olive oil, chopped shallot, garlic, oregano, chipotle chili powder, honey, harissa sauce, lemon zest, salt, and pepper. Stir until well mixed.
  • Add the chicken chunks to the bowl, ensuring they are well coated in the marinade. Marinate for at least 10 minutes.
  • Preheat your oven to 450°F (230°C).
  • Thread the marinated chicken onto skewers and place on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 20–25 minutes, until cooked through and slightly charred.

Make the Feta Fries

  • In a large bowl, toss the cut russet potatoes with olive oil, garlic powder, cayenne pepper, and salt until well coated.
  • Spread the seasoned potatoes evenly on a sheet pan and bake in the oven alongside the chicken for 15–20 minutes.
  • Flip the fries and bake for another 15 minutes or until golden brown and crispy.
  • In a separate bowl, mix the chopped herbs, lemon zest, grated garlic, toasted sesame seeds, and crumbled feta cheese.
  • Once the fries are done, sprinkle the herb-feta mixture over them and toss gently to combine.

To Serve

  • Arrange the chicken skewers next to the crispy fries on a serving platter.
  • Serve with tzatziki sauce and garlic tahini.

Notes

Marinate chicken for at least 30 minutes or overnight for better flavor. Consider adding lemon juice or smoked paprika for more flavor. Store leftovers in an airtight container for up to three days.
