Ingredients

For the cheese sauce

  • 2 tablespoons unsalted butter Creamy and rich, the unsalted variety gives you control over the saltiness.
  • 2 tablespoons all-purpose flour This will create the base, lending a silky texture to the sauce.
  • 1 cup whole milk The whole milk adds an extra creaminess, making the sauce luscious.
  • 1 cup shredded cheddar cheese A combination of sharp cheddar and Monterey Jack offers a melty, stretchy quality.
  • 1/2 teaspoon garlic powder Fragrant and savory, it enhances the flavor profile.
  • 1/2 teaspoon smoked paprika Adds depth with a touch of smokiness that beautifully complements the cheese.
  • 1/2 teaspoon salt Adjust to taste to bring out the flavors.
  • 1/4 teaspoon cayenne pepper Optional for a spicy kick.
  • 1 teaspoon hot sauce Optional, for extra depth.

Instructions

Preparation

  • In a medium saucepan, melt the butter over medium heat, letting it bubble gently.
  • Once melted, whisk in the flour and cook for 1–2 minutes until it turns golden.
  • Slowly pour in the milk, whisking persistently to avoid lumps, and let it cook for 2–3 minutes until it thickens slightly.
  • Lower the heat and add the shredded cheese, stirring until it melts into a smooth sauce.
  • Stir in the garlic powder, smoked paprika, salt, cayenne, and hot sauce (if using), mixing until fully combined.
  • Drizzle generously over hot, crispy fries or serve as a dip on the side.

Notes

For a healthier version, use low-fat milk or substitute half of the cheese with nutritional yeast. For a vegan option, try nut-based cheese sauces or cashew cream.
