Preparation

  • In a small bowl, mix the softened butter with the minced garlic until fully combined. Spread this mixture on one side of each slice of bread.
  • Heat a small pan over medium heat and add the diced bell peppers. Sprinkle with salt and pepper and sauté for about 2 minutes until slightly softened.

Assembling and Grilling

  • Place two slices of bread, buttered side down, on a clean surface. Layer half of the shredded cheese over the bread, then top it with the sautéed bell peppers and fresh parsley. Finish with the remaining cheese and top with another slice of bread, buttered side up.
  • Heat a non-stick skillet or griddle over medium heat. Once hot, carefully place the sandwich into the skillet. Grill for about 3-4 minutes on each side, gently pressing down with a spatula.
