Instructions

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed and resembles wet sand. Press into a 9-inch springform pan to form the crust and bake for 10 minutes. Let it cool.
  • In a large mixing bowl, beat the softened cream cheese until creamy and smooth. Gradually add granulated sugar, mixing until blended. Incorporate sour cream and vanilla extract, followed by eggs, one at a time, beating well after each addition. Fold in rainbow marshmallows gently.
  • Divide the batter into two bowls. Add purple food coloring to one and blue food coloring to the other, mixing until vibrant.
  • Alternate dollops of purple and blue batter into the cooled crust. Swirl gently with a knife for marbled effect.
  • Mix marshmallow fluff with a bit of purple and blue food coloring, then drop spoonfuls on top of the cheesecake and swirl gently.

Baking

  • Bake the cheesecake for 60-70 minutes, or until the center is set and the edges are light brown.
