Ingredients

For the caramelized shallots

  • 2–3 pieces Shallots, thinly sliced Bring sweetness and depth.
  • 1 tsp Butter Enhances the rich flavors.
  • 1/2 tsp Brown Sugar Adds a hint of caramel sweetness.
  • 1/2 tsp Balsamic Vinegar Balances the sweetness.
  • Salt & Pepper To taste, essential seasonings.

For the tarts

  • 2 tbsp Crumbled Feta Cheese Adds creamy texture.
  • 1 sheet Puff Pastry Forms the flaky base.
  • 1 piece Egg (for egg wash) For a golden sheen.
  • Fresh Thyme or Rosemary (Optional) For added aromatic notes.
  • Olive Oil (for brushing) Adds a gorgeous finish.

Instructions

Caramelize the Shallots

  • Melt the butter in a skillet over medium heat and add the shallots.
  • Sprinkle in brown sugar and balsamic vinegar, along with salt and pepper.
  • Cook for about 10 minutes, stirring occasionally until they are golden and soft.

Assemble the Base

  • Preheat your oven to 200°C (390°F) and line a baking tray with parchment.
  • Dollop a mound of caramelized shallots onto the parchment and sprinkle crumbled feta on top.

Cover with Pastry

  • Place a square of puff pastry over the shallots and feta, tucking the edges around the filling.
  • Brush the tops with egg wash.

Bake to Golden

  • Bake the tarts for 18 to 22 minutes until golden brown and puffed.

Flip & Reveal

  • Gently flip each tart onto a plate and garnish with thyme or a drizzle of olive oil.

Notes

Keep the heat on medium while caramelizing shallots to avoid burning and gently lay pastry over the fillings to prevent tearing.
