Instructions

Preparation

  • Start by steaming or boiling your chopped zucchini for about 5-7 minutes until soft. Drain and let it cool completely, then blend it into a smooth purée.

Make the Chocolate Base

  • In a medium saucepan over medium heat, whisk together the heavy cream, whole milk, cocoa powder, coconut sugar, and sea salt, stirring gently until smooth and slightly thickened (about 5 minutes). Remove from heat and stir in the vanilla extract, melted dark chocolate, and zucchini purée.

Chill & Churn

  • Transfer the chocolate mixture to a bowl, cover tightly, and chill in the refrigerator for at least 3 hours. After chilling, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until creamy.

Freeze & Serve

  • Transfer the churned ice cream to an airtight container, freeze for 2-4 hours to firm up, and then scoop out to serve.

Notes

For best results, ensure zucchini is finely chopped before steaming. Optionally, add chocolate chips or chunks, or let the mixture chill overnight for enhanced flavor. Serve it in elegant bowls topped with sea salt or fresh berries for added flair.
