Focaccia Dough

Instructions

Preparation of Dough

  • In a large bowl, mix together the flour, instant yeast, and salt before pouring in the warm water. Stir until you achieve a sticky mixture, then knead it briefly until somewhat smooth. Cover the bowl and let the dough rise until it has doubled in size, about 1 hour.

Baking Focaccia

  • Lightly grease a baking pan and transfer the risen dough into it. Gently stretch the dough to fit the pan, then dimple its surface with your fingertips. Generously drizzle olive oil on top and let it rise again for 30–45 minutes.
  • Preheat your oven to 425°F (220°C) and bake the focaccia for 25–30 minutes, or until golden brown. Allow it to cool on a wire rack.

Preparing Whipped Feta

  • In a food processor, blend the feta cheese, Greek yogurt or labneh, olive oil, grated garlic, and lemon zest until silky smooth. Season with salt and pepper.

Assembling the Dish

  • Slice the baked focaccia into slabs or squares, and create a pocket by slicing each slab horizontally.
  • Spread the whipped feta generously inside each open face.
  • Artfully arrange the halved cherry tomatoes, fresh herb sprigs, and edible flowers on top.
  • Optionally, sprinkle flaky salt and drizzle with olive oil before serving.

Serving

Notes

Allowing the focaccia to rise slowly improves flavor. Keep the dough slightly sticky and avoid using too much flour for best results.
