Ingredients

For the pastry flower

  • 2 sheets puff pastry (thawed if frozen) Light and flaky, ready to puff up into golden perfection.

  • 2 tbsp cream cheese or Greek yogurt Smooth and velvety, perfect for binding the texture.

  • 50 g sun-dried tomatoes, finely chopped (oil-packed, drained) Sweet and tangy, adding Mediterranean flavor.
  • 1 tsp dried oregano or thyme Aromatic herbs to evoke sunny essence.
  • 1 egg (for egg wash) Gives the pastry a shiny finish.
  • 4 tbsp honey Sweet with floral notes, star of the hot honey center.
  • 1/2 tsp chili flakes or hot sauce Adds a spicy kick.
  • pinch salt Enhances overall flavor.
  • Sesame or nigella seeds for topping Adds a decorative and textural crunch.
  • Fresh thyme leaves Adds freshness and color.
  • Flaky sea salt Brightens flavors as a finishing touch.

Instructions

Preparation

  • Preheat your oven to 200°C (400°F) and line a large baking tray with parchment paper.
  • In a mixing bowl, combine feta cheese, cream cheese (or Greek yogurt), and olive oil. Blend until smooth and creamy.
  • Stir in chopped sun-dried tomatoes and dried herbs into the whipped filling.
  • Roll out both pastry sheets into equal circles and place one on the prepared tray. Spread the feta mixture evenly, leaving a 1.5 cm border.
  • Place the second circle on top and cut 16 equal strips from the center outward, twisting each strip outward 2–3 times.
  • Brush the entire surface with egg wash and sprinkle sesame or nigella seeds on top.

Baking

  • Bake in the oven for 20–25 minutes until puffed up and deep golden brown.

Preparing Hot Honey

  • While the pastry bakes, warm honey over low heat in a small saucepan, stirring in chili flakes or hot sauce.

Serving

  • Let the pastry cool slightly, place hot honey in the center, garnish with fresh thyme leaves and flaky sea salt before serving.

Notes

Avoid overworking the dough and ensure you create a sufficient border when spreading the filling. Skipping the egg wash may lead to a pale pastry.
