Ingredients

For the whipped feta

  • 200 g feta cheese Creamy and tangy, this will be the star of the dish.
  • 60 g Greek yogurt or sour cream Adds richness and a touch of smoothness.
  • 1 tbsp olive oil A drizzle of golden elixir, contributing to the silky texture.

For the roasted grapes

  • 1.5 cups red seedless grapes Juicy and sweet, these grapes become the luscious topping.
  • 1 tsp olive oil For roasting grapes, to create a beautifully caramelized exterior.
  • 1 pinch salt Enhances the overall flavor.

For serving

  • 3 tbsp walnut halves, toasted Nutty and crunchy, providing the perfect contrast.
  • 1.5 tbsp hot honey For that sweet and spicy kick.
  • Optional: Fresh thyme leaves or chili threads For a finishing touch of earthiness or heat.
  • Warm pita, baguette slices, or seeded crackers For serving, to help scoop up the creamy feta.

Instructions

Preparation

  • Preheat your oven to 200°C (390°F).
  • Toss the red seedless grapes with 1 tsp of olive oil and a generous pinch of salt in a mixing bowl, then spread them onto a baking sheet.

Roasting

  • Roast the grapes for about 15–18 minutes, until they are blistered and juicy.
  • Check occasionally to ensure they are roasted to your liking.

Whipping Feta

  • In a blender or food processor, combine feta cheese, Greek yogurt (or sour cream), olive oil, lemon juice, and cracked black pepper. Blend until smooth and fluffy.
  • Chill the feta mixture before serving for an added refreshing touch.

Toasting Walnuts

  • In a dry pan over medium heat, add walnut halves and toast until fragrant and lightly browned. Roughly chop them if desired.

Assembly

  • Spoon the whipped feta into a shallow bowl, top with roasted grapes and their juices, and scatter toasted walnuts on top.
  • Drizzle hot honey over the top and finish with optional fresh thyme leaves or chili flakes.

Notes

Use high-quality feta for the best flavor, ensure grapes are ripe, and feel free to experiment with different toppings or nuts. Store leftovers in an airtight container for up to three days.
