Ingredients

For the whipped feta

For the roasted strawberries

Instructions

Roast the Strawberries

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, toss the hulled and halved strawberries with balsamic vinegar, honey, and black pepper.
  • Spread the strawberries evenly on a parchment-lined baking sheet.
  • Roast for about 15-20 minutes, or until soft and caramelized. Let them cool slightly.

Make the Whipped Feta

  • In a food processor, combine crumbled feta cheese, cream cheese, olive oil, lemon juice, and black pepper.
  • Blend until smooth and creamy, adding more olive oil for desired consistency.

Assemble & Serve

  • Spread the whipped feta on a serving plate or bowl.
  • Spoon roasted strawberries over the whipped feta, allowing juices to drizzle down.
  • Drizzle with olive oil and sprinkle with chopped basil or mint.
  • Garnish with black sesame seeds if desired. Serve immediately.

Notes

For an elevated flavor, add red pepper flakes for a slight kick. Store whipped feta in an airtight container, keeping roasted strawberries separate. Frozen strawberries can be used as well.
