Instructions

Cooking the Shrimp

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the shrimp and sear for 2–3 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and let them cool slightly.

Preparing the Dressing

  • In a small bowl, whisk together the fresh lime juice, lime zest, chili powder, cumin, salt, black pepper, and the remaining tablespoon of olive oil to create a vibrant dressing.

Chopping the Veggies

  • While the shrimp cools, dice the ripe avocado, halve the cherry tomatoes, slice the red onion thinly, and chop the cilantro. Each ingredient adds its unique texture and flavor to the salad.

Combining Ingredients

  • In a large mixing bowl, combine the cooled shrimp, diced avocado, cherry tomatoes, sliced red onion, and chopped cilantro.

Dressing the Salad

  • Drizzle the prepared dressing over the salad mixture, tossing gently to coat without smashing the avocado. Sprinkle crumbled cotija cheese on top if desired.

Notes

To enhance the shrimp's flavor, marinate them in lime juice and spices for 15 minutes before cooking. For a spicy kick, consider adding diced jalapeños or a dash of hot sauce to the dressing. If you’re pressed for time, use pre-cooked shrimp. Just thaw and toss them in for a faster prep.
