Instructions

Preparation

  • Preheat grill pan or skillet over medium heat.
  • Brush both sides of zucchini slices with olive oil, seasoning with sea salt and black pepper.
  • Grill zucchini for about 2 minutes per side until tender with char marks.

Almond Thyme Honey Drizzle

  • Warm honey in a small saucepan over low heat.
  • Stir in toasted almonds, fresh thyme, and optional crushed red pepper flakes.
  • Simmer for 1 minute to meld flavors, then remove from heat.

Assembly

  • Spread goat cheese on half of the grilled zucchini rounds and stack with another slice on top.
  • Continue stacking until two or three layers are formed.
  • Drizzle warm almond thyme honey over stacks generously.

Serving

  • Garnish with extra thyme leaves and toasted almonds.
